11 oz jar Apricot Preserves
1 tsp Dried minced onions
1 T Dijon Mustard
1 T Soy Sauce
1 1/4 tsp Ginger
1/4 tsp Red chili flakes (opt)
6-8 chicken thighs (or equivalent)
Grease crock (I use the new Reynolds Crock-Pot Liners & spray inside w Pam)
Mix- all other stuff
Pour on top of chicken.
Cover and cook on low 6-8 hours, -or- on high for 4-6 hours
You can even use frozen chicken- just add an hour of cooking time.
Serve with rice and a nice steamed veggie.
ALTERNATIVE RECIPE-
1 pkg Lipton Onion Soup Mix
8 oz Russian salad dressing
1 Cup Apricot preserves
(same directions as above)

Thanks for the recipe (sounds yummy) and the journal insight. I should really start one; more for my kids than for myself. Only because I wish my mom had one for her kids to read. I journaled alot when I was a teenager, but pretty sure my kids don't want to see the list of all the guys I kissed!! lol. Miss you!
ReplyDeleteSarah- You are so cute. I actually think my girls would like to see some of my Junior High journals. They are hilariously dramatic. Hmmmm- I wonder where my girls get it from. LOL! It's like one day I'm going to die because I had a fight with a boy, or broke up, and the next it's like....Hey- that guy running track is cute! I had a serious case of boy-ADD. Look, a shiney penny! LOL!
